Honeydew, Cucumber & Mint Popsicles
1 cup cucumber
4 cups Honeydew
2 Tbsp. Mint
- Use very ripe honeydew for best flavor. Slice melon in half. Scoop out seeds. Cut into quarters and remove skin with a knife, keeping all the juices.
- Chop cucumber and fresh mint.
- Puree until smooth in a blender.
- Pour into desired mold (or Dixie cups), and freeze overnight.
