Roasted Garlic and Cauliflower White Bean Dip


  • 2 15oz cans of organic white cannellini beans
  • 1 head cauliflower (4 cups)
  • 1 head garlic (6 cloves)
  • 1/2 cup parsley
  • 1/2 cup lemon juice
  • 1/4 cup water
  • 1 tablespoon apple cider vinegar
  • salt to taste

Directions: Pre heat oven 375

  1. Wrap your garlic in tinfoil and place in the oven for 60 minutes or until browned
  2. Meanwhile, cut your cauliflower into even florets, place on a tray with non-stick spray and bake for around 50 minutes or until golden brown (place it in the oven with your garlic)
  3. Once cooled place your cauliflower, roasted garlic and remaining ingredients in a food processor
  4. Purée until creamy, you may need to scrap it down and purée again
  5. Store in the refrigerator in an air tight container
