- 1 medium sweet potato
- 1 scoop (30g protein) vanilla or chocolate protein powder
- 2 teaspoons ground cinnamon
- ½ cup egg whites
- Bake the sweet potato in an oven or microwave until the center becomes soft, about 8-10 minutes. Peel skin and allow to cool.
2.Place in a blender with remaining ingredients and secure lid.
3.Pulse briefly until smooth.
4.Pour batter into heated pan or waffle iron (sprayed with nonstick cooking spray) and cook for about four minutes each side.
