Easy Lunch Ideas
- Spread lowfat hummus down center of deli turkey slices. Roll and eat
- Canned tuna, salmon, or canned chicken mixed with shredded apple + plain nonfat yogurt + mustard . Eat as is, or roll in a romaine lettuce leaf “wrapper.”
- Fat free refried beans + melted lowfat cheese. Top with salsa or enchilada sauce and plain nonfat yogurt or nonfat sour cream
- Mashed black beans or pinto beans + lowfat cottage cheese
- Well cooked sweet potato, slightly mashed, (remove skin if needed). Top with nonfat cottage cheese. Sprinkle with cinnamon
- Scrambled egg whites/egg omelet with lowfat cheese and 1/8 avocado
- Egg salad/egg white salad prepared with plain nonfat yogurt and/or small amount of lite mayo
- Hard boiled egg. Remove yolk. Fill center with salsa
- Baked Tofu (example of brand names: WhiteWave Baked Tofu, Tree of Life) + well cooked vegetables
- Top slices of apples with sliced turkey lunchmeat and lowfat cheese
