Chicken “Hurts” to Eat

Chicken’s dense texture can make it difficult to eat in the months and years after weight loss surgery.

If you’re finding chicken “hurts” to eat, try shredding it.

Start with rotisserie chicken if you want to speed preparation.

Put into a kitchenaid mixing bowl with the regular beater attachment and run the mixer until the chicken is shredded.

You can do this by pulsing in a food processor as well.

This step is critical to finely shredding the chicken which is what makes it easy to eat!

Mix with plain nonfat yogurt and/or lowfat mayonnaise to make it even moister. Sprinkle with pepper or paprika for more flavor. Voila, chicken salad!
