Taco Pie

INGREDIENTS:

  • 1 lb 93% lean ground beef
  • 1 packet taco seasoning
  • 3/4 cup water
  • 6 large eggs
  • 1/4 tsp each salt and pepper
  • 2/3 cup shredded 2% cheddar cheese
  • toppings as desired…Ex: Greek Yogurt and Diced Tomato

INSTRUCTIONS:

  1. Preheat oven to 350F.
  2. Meanwhile, brown ground beef as instructed on seasoning packet.
  3. Spread pan in the bottom of a greased 9 inch pie pan.
  4. In a large bowl, whisk eggs and season with salt and pepper. Pour over beef and tilt the pie pan to allow eggs to cover the beef evenly.
  5. Spread shredded cheese over top and bake for 25-30 minutes or until set. Remove from oven, let cool. Slice and serve with toppings as desired.
