Easy Lunch Ideas

  • Spread lowfat hummus down center of deli turkey slices. Roll and eat
  • Canned tuna, salmon, or canned chicken mixed with shredded apple + plain nonfat yogurt + mustard . Eat as is, or roll in a romaine lettuce leaf “wrapper.”
  • Fat free refried beans + melted lowfat cheese. Top with salsa or enchilada sauce and plain nonfat yogurt or nonfat sour cream
  • Mashed black beans or pinto beans + lowfat cottage cheese
  • Well cooked sweet potato, slightly mashed, (remove skin if needed). Top with nonfat cottage cheese. Sprinkle with cinnamon
  • Scrambled egg whites/egg omelet with lowfat cheese and 1/8 avocado
  • Egg salad/egg white salad prepared with plain nonfat yogurt and/or small amount of lite mayo
  • Hard boiled egg. Remove yolk. Fill center with salsa
  • Baked Tofu (example of brand names: WhiteWave Baked Tofu, Tree of Life) + well cooked vegetables
  • Top slices of apples with sliced turkey lunchmeat and lowfat cheese
